A SURVEY ON CONSUMMER BEHAVIOR AND NUTRITIONAL IMPACT OF TAKE HOME PACKAGED MEALS PURCHASED AT DEPARTMENT STORES OF KANGNAM AREA, SEOUL


Abstract
A survey on the system of food preparation, sanitation and food delivery process of this take out packaged meals purchased at the department stores of Kangnam area in Seoul, a well as determining the nutritional adequacy and consumer behavior, was conducted from October 2 to 4, 1986.
There were 22 products of 9 items of Kimbab, Yubuchobab, Yubuchobab-Kimbab, Ogokbab, Dosirak, Pork cutlet, Sandwiches, Kimbab-sandwiches, and Fried bread.
The distribution by food groups showed that there were too many kinds of food in Dosirak and few in Fried bread as group j , and group-.ff -was lack in most products except Ogokbab and Dosirak. Green yellow vegetables of group A: ere short in Yubuchobab, Ogokbab and Pork cutlet, group IV was not deficient at all, and group was lack in Kimbab and Ogokbab. Protein provided 17.4% of total food energy in Dosirak, 15.3% in Ogokbab, 13.6%o in Pork cutlet, 13.2% in Kimbab, 12.3% in Sandwiches, 10.7% in Yubuchobab and 6.4% in Fried bread.
The products were produced in the kitchens of the department stores, general housings, restaurants or a professional meal company, without dieticians except one kitchen.
The production, delivery and marketing were performed by traditional methods at room temperature mostly, and packaged in the boxes made of polystyrene or polyethylene with labeling, indicating selectively the name of food, price, production date, production place, but not the content, nutritional value and weight.
The survey of the food behavior of the consumer indicated that 37.7% answered the mostly frequency of the take out meals being more than once a month. They answered the picnic was the main reason for purchasing the take out packaged meals,
because they were not interested in preparing meals or lack of time. Kimbab was the most favorite food among 9 items.
The experience of deteriorated take out packaged meals and foreign materials inside the meals were reported to be 48.8% and 54.9%, respectively. The concern of the stability of the
meals was resulted that 70.17o were consuming them with worrying the safety.
